- 1/4 cup mayonnaise
- 2 tablespoons butter, softened
- 1 1/2 tablespoons lemon juice
- 1 tablespoon parsley
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 hot dog buns
How To Make
STEP ONE: Prep the instant pot and the lobster. Add the trivet to the instant pot. Add 1 cup of water. Sprinkle the water with old bay seasoning. Carefully cut a slice down the back of each tail with kitchen shears. This will make opening the tail easier. Place the lobster tails upside down on the trivet.
STEP TWO: Cook. Place the lid on the instant pot and turn the valve to sealing. Set to high pressure for 4 minutes.
STEP THREE: Blend the sauce. To a mixing bowl add the mayonnaise, butter, lemon juice, parsley, salt, and pepper. Stir well.
STEP FOUR: Cut up the lobster. Once the time is up do a manual release. Remove the lobster tails from the instant pot with tongs and transfer them to a cutting board. Cut open the shells from the tails and remove the meat. Cut into pieces then stir into the mayonnaise mixture.

How to Store Lobster Rolls
In the Fridge: If you have leftover lobster meat, you can eat it again another day. Get the leftovers into the fridge as quickly as possible and store for 2-3 days in an airtight container. I recommend storing the bread and the lobster separately because the bread will end up soggy.
In the Freezer: If you’ve already mixed the lobster and the mayo, it’s probably best to eat it up within a few days. You can try to freeze your mixed meat but the mayo doesn’t tend to thaw well. Instead, keep the lobster meat separate and freeze for 3-4 months in an airtight container. Make fresh sauce when you’re ready to eat them again.
