Ground beef and ground pork both need to be fully cooked to be food-safe. Make sure the internal temperature of your meatloaf is 160 F. Because the meat is ground, bacteria can be found throughout the entire package of meat (unlike steak where the bacteria will only be found on the outside, making it safer to consume when cooked more rare).
Yes, it’s best to cover your meatloaf in the egg molds. This is because condensation will form at the top of the instant pot. The water will drip down onto your food making it wet and soggy. Covering your meatloaf protects your food from the water droplets.
