Instant Pot Mini Meatloaf

Instant pot mini meatloaf is a fun and tasty way to serve meatloaf. Made with ground beef, pork and simple seasonings these are baked into a handheld dinner kids love!

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound ground pork sausage
  • 1/2 cup panko use gluten-free if needed
  • 2 teaspoons Worcestershire sauce
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup ketchup

Instructions

  • Prep the instant pot and molds. Add 1 cup of water to the instant pot. Place the trivet into the instant pot. Spray the egg molds with nonstick cooking spray.
  • Mix the meatloaf. In a large mixing bowl using clean hands combine the ground beef, ground pork sausage, breadcrumbs, eggs, salt, and pepper. Divide the meat mixture between the egg molds. Cover the molds with tin foil and stack them on the trivet in the instant pot.
  • Cook. Set the instant pot to high pressure for 35 minutes. Once time is up do a quick release. Carefully remove the molds by lifting the trivet out. Cool for 5 minutes.
  • Serve. Serve hot brushed with ketchup or serve the ketchup on the side for dipping.

Notes

  • You don't have to use pork, but because it has a higher fat content than beef, it will make your mini meatloaf really juicy.
  • You can add a dollop of ketchup to the top of your mini meatloaf before cooking. It may result in a less golden crust, though.
  • Don't overmix your meatloaf meat. The more you mix, the tougher your meatloaves will be.
