Instant Pot One Pot Pasta

Our instant pot one pot pasta is rice and creamy fettuccini that's quick and delicious. Made with heavy cream and lots of cheese it's a family favorite!

Ingredients

  • 3 cups chicken broth
  • 1/2 cup lemon juice
  • 2 cups heavy cream
  • 4 tablespoons butter, cut into pieces
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 16 ounces fettuccini noodles, broken in half
  • 1 cup parmesan cheese
  • 1 cup mozzarella cheese
  • 4 ounces cream cheese
  • 1/2 cup capers

Instructions

  • Add the pasta ingredients to the instant pot. Add the chicken broth, lemon juice, heavy cream, butter, garlic powder, salt, and pepper to the instant pot. Stir. Add the fettuccini noodles, and press lightly into the liquid but don't stir.
  • Cook. Place the lid on, turn to sealing, and set to high pressure for 6 minutes. When done, release pressure on fast release.
  • Sit in the cheese. Add the parmesan cheese, mozzarella cheese, capers and cream cheese. Gently stir until blended.
  • Serve. Serve hot.

Notes

  • Make sure you release the pressure quickly or liquid can come out of the pressure release!
  • Don't stir your pasta! This sounds counterproductive, but when you place your pasta in the instant pot with the liquids, don't stir it! Just turn it on and let it cook. This is because the pasta will release too much starch into the instant pot and will result in mushy pasta.
  • Check to make sure your pasta is fully cooked after 6 minutes. If your pasta isn't done, put it back in the Instant Pot on high pressure for another 2 minutes. If the liquid is gone but the pasta is still not fully cooked, put another 1/4 cup of broth or water into the pot.
  • Asiago can be a great replacement for parmesan cheese in this recipe.
  • Fresh parmesan will melt in and taste much better than grated, dried parmesan, but it will work in a pinch.
  • You can omit the capers if you don't like the flavor. You can also replace the capers with broccoli, peas, or another veggie of your choice.
