- For a gluten-free meal, you can use Orrington Farms onion soup mix, Orrington Farms chicken soup base, and Aleia’s stuffing mix. If you don’t need gluten-free ingredients, you can use Stove-Top Stuffing or another brand you like.
- Instead of chicken, you can use turkey instead. This recipe is an excellent way to use up holiday leftovers.

Tips and Recipe Notes
- You can double this recipe if you have an 8 qt Instant Pot.
- When you stir the water and stuffing together, stir slowly and gently, and just until mixed. Your stuffing will break apart easily otherwise.
- For a crispy top to your stuffing, place the cooked chicken and stuffing in a baking dish and broil in the oven for 2-3 minutes. Watch it closely so it doesn’t burn!

How to Store Leftover Chicken & Stuffing
If you have any leftovers (we never do!), you can allow them to cool to room temperature, then place them in an airtight container in the fridge. They should last for 3 days, but if your chicken was already a few days old, take that into account. It may not last as long in that case.
You can also freeze this dish. Just place it in a freezer-safe Ziploc bag and freeze it for up to 2 months. Keep in mind, the stuffing may thaw a bit soggy.
To reheat, you can microwave your leftovers in 30-second increments. Stir well between each interval so the chicken and stuffing heat evenly.
FAQs
No, it won’t in this recipe. There are two reasons for that. The first is that the Instant Pot only cooks for 3 minutes, so there isn’t much time to overcook it. The other reason is that there is enough water in the Instant Pot to keep everything moist.
You can add sauteed celery or onion, dried cranberries, water chestnuts, or other things your family loves into the Instant Pot before cooking.
