Egg bites, made famous by Starbucks, are 2-bite molded quiches made from eggs, cheese, and your choice of fillings and seasonings. They’re cooked in a mold that makes a shape similar to a mini muffin and can be eaten for breakfast, as a filling snack, or even as an appetizer.

What Is An Egg Bites Mold for the Instant Pot?
To make the best egg bites, you’ll want to get a silicone egg bites mold for the Instant Pot. An egg bites mold is designed to fit perfectly in the inner pot and has 7 small depressions that hold the mixture for your egg bites.
Much like a mini muffin tin, your egg bites mold depressions make bite-sized mini quiches. And because your mold is made of silicone, your egg bites will slide right out, and clean-up will be a breeze.
What Are Some Good Fillings for Egg Bites?
That’s such a great question because choosing the fillings for your egg bites is the best part! This recipe shows you how to easily make egg bites with cheese and bacon, but the sky really is the limit.
If you don’t like cheese or can’t eat it, it’s totally fine to leave it out! But if cheese is your jam, here’s our best advice:
First, you can use any cheese you’d like. You can toss freshly grated or store-bought shredded cheese like cheddar, mozzarella, Colby-Jack, or a blend. I’m a fan of finely shredded cheese for this since it mixes in and melts really well. For a real treat, splurge on some gruyere!
You can also mix in soft cheeses like brie, laughing cow, cream cheese, or even cottage cheese.
Any meat will do too! Bacon is a crowd favorite, but pancetta or cooked ham chunks are also delicious.

Instant Pot Egg Bites Ingredients
To make egg bites in the Instant Pot, you’ll need:
- 12 large eggs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon parsley
- 1/2 cup shredded Colby jack cheese
- 4 strips of cooked bacon, chopped
- 1 cup of water for the instant pot
How Do You Make Instant Pot Egg Bites?
STEP ONE: Prep the egg mold and instant pot. Spray the egg mold with nonstick cooking spray. Add the trivet and add 1 cup of water to the Instant Pot.
STEP TWO: Blend the egg mixture. To a blender, add the eggs, salt, pepper, and parsley. Blend well. Add the cheese and bacon and pulse just until combined. Pour into the prepared egg molds. Cover with foil and place into the Instant Pot. You can add two molds stacked one on top of another if desired.
STEP THREE: Cook. Place the lid on the Instant Pot. Close the sealing valve. Set your IP to “High Pressure” for 12 minutes. Once complete, do a manual release. Remove your egg molds using a hot pad or towel, as they will be hot, and transfer them to a cooling rack.
STEP FOUR: Serve. Once cooled, flip your molds upside down and push on each mold to pop out the baked eggs. Top with more cheese, bacon, green onions, and salsa if desired.
Recipe Notes and Tips
This recipe is straightforward and comes together nicely if you follow the directions well. In order for your egg bites to cook properly, you need to have a proper ratio of eggs to fillings.
- Don’t add too much cheese, or you’ll end up with wet, stringy egg bites.
- Don’t try to flip them out of the mold too soon, or your egg bites will crumble. They need a few minutes to firm up.

How to Reheat Egg Bites
If you’ve got leftovers, you can save them for later! Here’s how:
In the Fridge: Once your egg bites have cooled to room temperature, place them in a Ziploc bag and refrigerate for up to 3 days.
In the Freezer: Wrap your fully cooled egg bites tightly in plastic wrap, then place them in a Ziploc bag in the freezer. Store for up to 3 months.
To Reheat: When you want to reheat your egg bites, place 2-3 on a microwaveable plate and cover with plastic wrap. Microwave in 30-second increments until hot.
FAQs
When you remove your egg bites from the Instant Pot, verify they’re cooked through. If they look a bit runny, place them back in the Instant Pot and cook with pressure for 2 more minutes, then check again.
The most common reason for wet egg bites is too much moisture in your mix-ins. If you’re adding veggies, make sure you pre-cook them. Tomatoes should be well drained before adding.
It’s also possible your egg bites will be wet if you don’t cover them. Condensation will accumulate on the underside of your Instant Pot lid and drip down onto your egg bites. Cover well with foil. The lid that comes with your silicone molds is most likely not meant for use inside the Instant Pot!
