Instant Pot Bundt Cake

Ingredients

  • 1 box gluten-free vanilla cake mix
  • 3 large eggs
  • 1 cup water
  • 6 food coloring colors
  • 1/3 cup vegetable oil
  • 1 cup Magic Spoon Fruity Cereal

Instructions

  • Mix the cake batter. In a large bowl, mix together the cake mix, eggs, water, and oil. Divide the batter between 6 bowls. Mix a few drops of the food coloring into each of the bowls. Stir.
  • Prep the pan and layer the cake. Grease a 7-inch bundt pan with nonstick cooking spray. Scoop small amounts of each of the colors of batter into the bundt pan until all batter is used.
  • Prep the instant pot and cover the cake. Add 1 cup water to the inner bowl of the instant pot. Place the trivet inside. Make a foil sling by folding tin foil into a strip and place it under the cake pan. Carefully lower the cake pan on top of the trivet in the instant pot. Loosely fold the foil sling over the top of the bundt pan. Close the lid and turn the valve to sealing.
  • Cook. Cook on high pressure for 35 minutes. Once the time is up do a quick pressure release. Let the cake cool on a cooling rack for 30-60 minutes. Use a knife to gently separate the cake from the sides of the bundt pan and turn the cake onto a plate.
  • Frost and serve. Frost as desired and top with crushed Magic Spoon Fruity cereal and fill the center with additional cereal if desired.

Notes

  • Grease your pan well. You can use cooking spray, but make sure you get all the edges of your bundt pan. You can also use butter and flour if you prefer.
  • If you're using a smaller bundt pan, it's ok not to use all the batter. Fill the pan to about 2/3 full to give the batter room to expand during the cooking process. You may have to reduce the cooking time by 5 minutes or so.
  • Most bundt pans are coated with a non-stick surface to help your cake come out of the pan more easily. To preserve the coating, wash your cake pan simply with hot water, dish soap, and a cloth. Don't use a harsh abrasive or any kind of rough scrubber that might scratch the surface.
